Lemon Basil Cookies

1/2 cup (125mL) unsalted butter, softened
3/4 cup (175mL) granulated sugar
1/4 cup (60mL) sliced basil
zest of 2 lemons
1 egg
1/4 tsp (2mL) salt
1 1/2 cups (375mL) all purpose flour

Preheat oven to 350F
1. In a large bowl or a stand mixer, beat butter with sugar until pale in colour. 
2. Add sliced basil, lemon zest and an egg, continue to mix until blended together. 
3. Add all remaining ingredients. Stir until just combined. Do not over mix. 
4. Place all batter onto a large piece of plastic wrap. Roll cookie dough into a large log and place into the refrigerator for about 30 minutes to let batter rest.  
5. After resting, unwrap cookie dough and slice into rounds. Place onto a parchment lined baking sheet and bake in the oven for about 8-12 minutes or until light golden brown. 

Cool completely before removing from baking sheet, otherwise cookies will fall apart!
